Breakfast Cup

RECIPE: Yields 6 bacon egg cups - 3 slices of bread - 3 Tbsp. shredded cheese - 6 slices of bacon, cooked - 6 eggs - Salt & pepper With a jar or cookie cutter, cut 2 circles into each piece of bread. Place in muffin tin cups.  Wrap a piece of cooked bacon along the edge of each muffin cup—make sure the bacon is JUST cooked and still warm, so it doesn’t break or crumble.  Sprinkle 1/2 Tbsp. cheese into each cup, then top with an egg.  Season with salt & pepper, and bake at 400°F for 15 min (longer for firmer yolk). Top with green onion.

Easy Crab Stuffed Bacon Wrapped shrimp

Ingredients- 1 1⁄2 lbs peeled extra large peeled raw shrimp 2 pre-made crab cakes 1 lb bacon Assembly directions- Pinch off about 2 teaspoons of crab cake for each shrimp. Cut bacon into thirds. Wrap each shrimp and crab with bacon. Store in large container with lid using wax paper between layers. Cooking directions- Place shrimp on large baking sheet in single layer. (use a wire rack if you have one). Bake 450 degrees for 15-20 minutes until bacon is crisp and shrimp is cooked.

Breakfast Enchiladas

1/4-1/2 lb deli sliced ham (8-12 slices) 1 ½  C. shredded Mexican cheese blend 8-12 flour tortillas 1- 1½  C. half & half 6 eggs 1 T flour ½ C. shredded Mexican cheese blend. Place one slice of ham on each flour tortilla (assembly line style). Top each tortilla equally with cheese. Roll and place in 9×13 baking dish sprayed with non stick spray. Top with remaining cheese. Add next 3 ingredients to blender and blend.  I used a blender bottle because I did not want the big blender in the refrigerator.  You know, the kind with the little spring ball inside that you use for protein shakes.  This way you get your workout in while you cook. All I could think of when shaking this was the commercial for the “Shake Weight”.  Makes me laugh out loud every time I see it. Coney Dogs or Chili Dogs

8-12 hot dogs (look for 100% beef & nitrite free) 8-12 hot dog buns (whole wheat) ½ C. mayonnaise (low fat) ½ C. relish (sweet or dill) 1-2 cans turkey chili 1 C. frozen chopped onion (opt) 1 C. shredded cheddar cheese Line a 9×13 baking dish with foil.  (you might need an additional pan to fit them all)  The 9×13 pan will fit 8. Spread a thin layer of mayonnaise on one side of each bun.  Top with dog and place in baking dish. Top each with relish, chili, onion and cheese.  Cover with foil. Bake covered in a 350 degree oven for 40 minutes. These are not at all soggy.  They are perfect!  Just like the ones you get at Sonic drive in.  These would be great to take to an outside summer concert or picnic.

“PHILLIPS CRAB HOUSE” CRAB IMPERIAL

• 2lbs lump crab meat • 2 eggs, beaten • 6 tablespoons mayonnaise • 2 tablespoons lemon juice • 1 tablespoon Worcestershire sauce • 1 tablespoon parsley flakes • 3 tablespoons butter, melted • 3 teaspoons Old Bay Seasoning • cracker crumb • paprika DIRECTIONS 1. In a large bowl, mix all ingredients, except crab meat. 2. Add crab meat and turn lightly so as not to break up the lumps. 3. Put in a buttered 2 quart casserole or fill 8 buttered individual baking dishes (shells) and top with cracker crumbs. 4. Cover with melted butter. Sprinkle with paprika. 5. Bake at 350°F for 15-20 minutes until bubbly and brown. 6. Note: If desired, top with grated cheese last 5 minutes of baking.

Pork Enchiladas

Put pork in the slow cooker on low for about 7 hours with a can of enchilada sauce (spiciness to your  preference),  pull out pork with a slotted spoon and shred with a cake mixer for fast shredding,  heat up tortillas and fill with meat and a little bit of juice (you can add rice, beans, onions, etc to your liking),  roll burrito and place on oven safe dish,  add more juice and shredded cheese,  bake until melted,  add more juice if desired.  Serve with Rice, beans, chips, salsa. Enjoy! 

Scrambled Eggs Bake

Cook 1 14-ounce package of bacon , and then crumble it.  Set a large frying pan over medium-high heat, and add  5 tablespoons of butter.   When the butter melts, add the crumbled bacon and 2/3 cup  of chopped onions.  Cook the onions and bacon in the butter until the onions are soft,  about five to 10 minutes.   Beat 18 eggs , and add them to the onions and bacon.  Continuously stir the egg mixture as it cooks until the eggs  begin to set but are still slightly wet, approximately five minutes. In a separate pan, add 5 tablespoons of butter .  Melt the butter over medium-high heat, and mix in  5 tablespoons of all-purpose flour until thoroughly combined.  Pour in 3 cups of milk , and mix in 1 1/2 cups of Cheddar cheese,   2/3 teaspoon of salt and 1/4 teaspoon of ground black pepper .  Stir the ingredients continuously until the cheese completely melts,  app...
