Mam's Chicken and Dumplins

Directions: Large can cream of chicken soup 1/2 cup milk Add veggies if you like Add chicken (cooked breast or roasted chicken from store cut up) Stir together and put on medium Directions for dumplins Stir 2cups of Bisquick and 2/3 cup milk until soft dough forms. Drop by spoonfuls onto boiling stew; reduce heat. Cook uncovered 10 minutes. Cover and cook 10 minutes.

Mam's Christmas Overnight Crock pot Breakfast

Ingredients: 1 bag 26 oz. frozen hash browns 12 eggs 1 cup milk 1 tablespoon ground mustard 1 16 oz. roll sausage maple, sage or regular sausage. Salt and pepper 16 oz. bag shredded cheddar cheese Directions: 1. Spray crock pot and evenly spread hash browns at the bottom. 2. Crack 12 eggs in a large bowl. 3. Mix well (and slowly) using a whisk. 4. Add the milk. 5. Go ahead and sprinkle in the ground mustard. This might sound like a weird ingredient, but I've come to love (and use) this in most of my recipes. 6. Add plenty of salt.... ...and lots of fresh pepper. Mix well and set aside. 7. Cook the sausage on high heat, drain and set aside. 8. Add sausage on top of hash browns. 9. Is this enough cheese? Maybe? Probably. Throw the whole big bag in there. 10. Mix it up well. MAM'S PORK CHOP SCALLOP

PORK CHOP SCALLOP 4 pork loin or rib chops, 1/2 to 3/4 inch thick 1/2 tsp. salt 1/8 tsp. ground black pepper 1 (4.7 oz) box Betty Crocker Scalloped Potatoes (dry mix) 2 1/2 cups water 2/3 cup milk Chopped fresh parsley (optional, for garnish) Cook pork chops in 10-inch skillet over medium heat until brown on both sides; sprinkle with salt and pepper. Remove from skillet.  Stir (dry) potato slices, sauce mix, 2 1/2 cups water, and milk into skillet. Heat to boiling, stirring frequently.  Reduce heat; place pork chops on top of the potatoes. Cover and simmer, stirring occasionally, until potatoes are tender, 30-35 minutes. Garnish with parsley if desired. 

Mam's perfect Clam Chowder

Ingredients: 4 (6 1/2 ounce) cans minced clams 1/2 cup finely chopped onion 1/2 cup finely diced celery 3 cups finely diced potatoes 1/2 cup butter or margarine (a cube) 1/4 cup flour 2 cups half-and-half, warmed 1 teaspoon salt, to taste 1 dash pepper 1/2 teaspoon sugar 1 TBSP Worcestershire Sauce 1/2 cup juice from clam 1 chicken bouillon cube 2 cups chicken broth or more as needed Directions: Drain the juice from the clams; set the clams aside and save the juice. In Pot...Cook bacon until crisp, remove and set aside. Add 1/2 cube butter and 1/2 cup finely chopped sweet onions and cook until softened; 6 minutes Add 1/4 cup flour and stir continuously until absorbed; about 1 minute. Slowly stir in 2 cups half and half, 2 cups  chicken stock, 1/2 cup  clam juice ; stir about 5 minutes Prepare and add 1/2 cup finely chopped celery and 3 cups diced potatoes and put in pot. Joyce's Clam Chowder

3 (6 1/2 ounce) cans minced clams package of bacon 1 cup finely chopped onion 1 cup finely diced celery 2 cups finely diced potatoes 3/4 cup butter or margarine 3/4 cup flour 4 cups half-and-half, warmed 1 tbsp. worcestshire sauce 1 chicken bouilion cube 1 teaspoon salt, to taste 1 dash pepper Cook bacon and cut up. Dice onion, celery and potatoes. In a medium saucepan, drain the juice from the clams; set the clams aside. Combine clam juice with the onions, celery and potatoes. Add enough water to barely cover and simmer, covered, over medium heat until the potatoes are tender, about 20 minutes. In a large saucepan, melt the butter. Add flour and stir in to the butter. Slowly whisk in the warm half-and-half. Cook and whisk until smooth and thick, about 5 minutes. If you want a thinner chowder, add 1/2 to 3/4 cup water or clam broth. I use milk though. MAM'S BREAKFAST CASSEROLE

8 frozen hashbrown patties 4 cups shredded cheddar cheese 1 lb cubed ham 7 eggs 1 cup milk 1/2 tsp. salt 1/2 tsp dry mustard Lay hashbrowns in 9x12 baking dish Sprinkle cheese and ham on top Mix rest of ingredients and pour over top Bake 350 for 1 hour Uncover and bake 15 minutes.... until knife comes clean!

AUNT SHERRY'S CLAM DIP

I GOT THIS RECIPE AT HEATHER'S WEDDING RECEPTION.... IT IS HER AUNT'S AND IS SO EASY & NUMMY! 2 8oz. pkgs room temp cream cheese 2 8 oz. cans chopped clams (drain and save juice) 2 tbsp. mayo garlic powder to taste worcestershire sauce to taste Mix cream cheese, may, garlic powder & worc. sauce in a bowl. Slowly & carefully add clam juice until it's dippable. Add clams to mix and frig overnight. Take out an hour before serving. Add more of clam juice if necessary.

JOYCE'S APPLE CRISP APPLE CRISP 6 cups peeled & sliced apples 2/3 cup quick cooking oatmeal 1/2 cup packed brown sugar 1/2 cup bisquick 1/2 stick butter or margarine (softened) 3/4 tsp. cinnamon 3/4 tsp. nutmeg Spread apples in 8x8 pan Mix remaining ingredients and sprinkle over apples Bake 375 ... about 35-40 minutes

JOYCE'S STRAWBERRY SPINACH SALAD

JOYCE'S STRAWBERRY SPINACH SALAD Chop: 2 bags baby spinach Slice: Strawberries Mix: 1/2 cup sugar, 1 TBSP sunflower seeds, 1/4 cup worcestershire sauce, 1/2 cup olive oil, 1/4 cup white vinegar, 1 and 1/4 tsp minced onion Add the dressing at the last minute! This is a good salad!

JOYCE'S SWEET & SOUR CHICKEN WINGS

JOYCE'S SWEET & SOUR CHICKEN WINGS These sweet and sour wings are such a favorite in our family. They are messy to cook and messy to eat, but they are so good! I've had this recipe longer than I can remember! 5 lbs disjointed chicken wings water flour or cornstarch eggs oil sauce: 1/2 cup chicken broth 1 1/2 cups brown sugar 1 cup vinegar 1/2 cup ketchup 2 tablespoons soy sauce 1 pinch salt 2 hours 15 minutes 45 mins prep Boil the wings and then simmer for a little while. Beat 4 eggs into a bowl (may have to add more as you go). Place flour in a dish. Dip wings into flour and then the egg mixture. Place in frying pan. Fry until brown turning only once. Place into 9X13 cake pan single layer. Mix all the sauce ingredients into a pot, heat, and dissolve. Pour over chicken wings. Bake 300 degrees uncovered for 1 1/2 hours, turning often.

JOYCE'S WORKPERSON'S ROAST WITH GRAVY

WORKPERSON'S ROAST! Place roast in center of large sheet of foil in 9X13 pan Cut slits in roast and push in sections of garlic if you want Pour a large can of Cream of Chicken soup over the top Sprinkle Worcestershire sauce on top Pour Lipton Soup Mix on Add salt and pepper Pull up and seal roast in foil...leaving space around top. Bake 250 for 10 hours! Or place it in your crockpot on low (without the foil)! Smells great when you walk in from a hectic day at work!

Joyce's Enchilada's

Joyce's Enchilada's Cook and drain 1 lb burger or Cook and dice chicken (whichever you prefer) Add and simmer 10 minutes: 1 can tomatoes (16 oz) 1 can tomato paste (6 oz) 1/2 cup water 1/2 cup chopped onion 1 TBSP Chili Powder 1 and 1/4 tsp salt 1/4 pepper 1 package tortilla's (8 oz) Fry in hot oil til soft and drain Place rounded tablespoons full of meat sauce in middle of each tortilla Add Shredded Cheddar Cheese Roll up tight Place seam down in baking dish Top with remaining sauce and cheese Cover dish with foil Bake 375 25 minutes
