PUMPKIN PIE

Ingredients ¾ cup sugar 1 ½ teaspoons pumpkin pie spice ½ teaspoon salt 1 can (15 oz) pumpkin (not pumpkin pie mix) 1 ¼ cups evaporated milk or half and half 2 eggs, beaten 1 frozen deep-dish pie crust    Instructions Heat oven to 425°F.  In a large bowl, mix filling ingredients.  Pour into pie crust. Bake 15 minutes.  Reduce oven temperature to 350°F; bake 40 to 50 minutes longer or until a knife inserted near center comes out clean. Cool for 2 hours. Serve or refrigerate until serving time. Store in the refrigerator.

CHICKEN POT PIE

Ingredients 2 lb  chicken breasts, boneless and skinless   2 c  chicken broth (enough to cover breasts) 1/2 tsp  salt 1/4 tsp  ground black pepper 1 1/2 c  half and half 3 Tbsp  butter (yes, 3 tablespoons!) 1 medium  onion, chopped 1 c  celery, chopped 1/3 c  all purpose flour 1 1/2 c  frozen mixed vegetables, thawed (i use green beans, corn, carrots and peas) 2 medium  potatoes, cooked and cubed (or 1 can small white potatoes, cubed) 1 Tbsp  parsley, freshly chopped 1/2 tsp  thyme, dried 2  pie pastry (for double crust pie) 1  egg, lightly beaten    Instructions: Preheat oven to 400 degrees. Prepare a deep pie dish by lining it with one of the pie pastries. Combine the chicken breasts, chicken broth, salt and pepper in a large saucepan, over medium-high heat. MONKEY BREAD

Ingredients 3 cans biscuits (cut in quarters) 3 ⁄ 4  cup sugar 3 teaspoons cinnamon 1 ⁄ 2  cup pecans 1  1 ⁄ 2  cups melted butter or 1  1 ⁄ 2  cups melted margarine 1 cup sugar 2 teaspoons cinnamon nonstick cooking spray Instructions: In a bag or bowl, place biscuits, sugar, and cinnamon and coat the biscuits well. Spray bundt pan or bread pan with non stick coating. Sprinkle pecans on bottom.(opt) Cover with biscuits. Mix butter with sugar and cinnamon. Pour over top. Bake at 350 for 35 minutes. When done cooking, turn pan upside down on a plate, to let the goo run all over. Serve hot.

fish and chips

INGREDIENTS 2 c. all-purpose flour 1 tsp. baking powder ½ tsp. salt 1 tsp. malt vinegar 1 gal. canola oil 2 lb. russet potatoes 4 cod fillets DIRECTIONS Combine flour, baking powder, and salt in a mixing bowl. Whisk in 1 3/4 cups water and stir in vinegar; set batter aside. Heat canola oil to 300 degrees; in a deep fryer or a deep, heavy pot with a candy thermometer. Peel and cut potatoes lengthwise to form long, 1/4-inch-thick "chips." Add to oil, and fry 10 minutes, stirring occasionally. Remove and drain well on paper towels, then place in refrigerator to chill, 10 to 15 minutes. Keep oil in pot on stove, but turn off heat. Bring oil to 350 degrees. Fry chips a second time, in two batches, until golden brown and crisp, 2 to 3 minutes per batch. Drain well on clean paper towels. (Keep chips warm in a 250 degree oven while cooking fish.) Soft Christmas Cookies

Mix 1 cup of sour cream  and 1 tsp baking soda; set aside.  Beat 1 cup softened butter and 1-1/2 cups granulated sugar in large bowl with mixer until light and fluffy.  Add 2 eggs; mix well.  Blend in 1/2 tsp. nutmeg, 1 tsp. vanilla and sour cream mixture.  Gradually add 4 cups of flour, beating well after each addition.  Refrigerate 30 min. Heat oven to 350ºF.  Drop tablespoonfuls of dough, 2 inches apart, onto baking sheet sprayed with cooking spray. Bake 10 to 12 min. or just until centers are set and edges are lightly browned.  Let stand on baking sheets 3 min. Remove to wire racks; cool completely. Mix powdered sugar and milk until blended; spread onto cookies. Let stand until frosting is firm. ADD Chocolate frosting,  sprinkles,  coconut,  food coloring, mini chocolate chips

PERFECT GRAVY

4 CUPS MEAT DRIPPINGS SET ASIDE 1.  MELT 1 STICK OF BUTTER (1/2 CUP) IN PAN OR POT 2.  SLOWLY ADD 1/2 CUP FLOUR STIRRING 3.  SLOWLY ADD THE 4 CUPS OF MEAT DRIPPINGS.     (IF YOU DON'T HAVE ENOUGH ADD BROTH) 4.  ADD SEASONINGS  (I ADD GARLIC POWDER, SALT AND PEPPER) For Biscuits and Gravy: Cook sausage and remove from pan Add 1 stick of butter to drippings Add 1/2 cup flour Add 3 cups of milk Add garlic powder, pepper Add sausage back into pan
